What does it mean when my ebook reader requires a “FAT” or “FAT 32” format?

The only difference is size. SDHC cards are normally 4GB to 32GB, while SD cards are less than 4GB. HC stands for High-Capacity.
FAT/FAT32 refers to how the card is formatted. Generally you can only format the card in FAT or FAT32 anyway. Given the option, pick FAT32.
You really shouldn’t have to worry about any of this stuff. Just buy a memory card, and insert it into the ebook reader.
