How can I wire a sensor to give me a readout on an LCD?

Q: Installed 2000 Mazda Protege complete AC system in my 1978 Mazda GLC. The evaporator sensor has 3 wires, couldn’t get it to work with 12 volts, to cycle compressor clutch. Installed capillary tube sensor. How can I wire original sensor to give me a readout of evap coil temp? I have a thermometer stuck in ductwork, but a LCD readout would look cool. Remember cheap is best, I don’t want a laptop to do all this simple sensing. I have a Mazda wiring diagram, if needed. Thank you for any responses.
