The date and time that the Windows 7 event viewer shows is what is in the logs. The logs will work off the date/time of the computer. So as long as the date/time of the computer was correct then in theory these should be correct.
It is possible to get in the logs and screw with the date/time but it isn’t easy and you would have to do a lot of changes to make sure everything else after it matched up as well.
So I would say that unless someone knew what they were doing then the date/time is trustworthy.
