Put simply, you can’t without the installation media or the install files you downloaded from the internet.

The original computer’s motherboard fried, and since the machine wasn’t worth fixing a new one was purchased, I removed the hard drive and installed it in an external drive case and can read the files.

You can pull data files (documents, videos, music, etc.) over no problem. But any software programs are going to need to be installed to work correctly. This is because data is written to the Windows registry and other areas in addition to what you might see in the /Programs Files/ directory. So get the install CDs or redownload the programs.
